Other methods, such as&nbsp;<a href=\"https:\/\/cultivated-x.com\/fermentation\/yali-bio-precision-fermented-dairy-fat-alternative-food-tech-event\/\">precision fermentation<\/a>&nbsp;and&nbsp;<a href=\"https:\/\/cultivated-x.com\/investments-finance\/cultimate-foods-e2-3m-for-taste-changing-cultivated-fat-plant-based-meat\/\">cultivated fats<\/a>&nbsp;require expensive facilities and economies of scale.<\/p>\n\n\n\n<p>In contrast, Savor leverages an innovative thermochemical method that involves pulling CO2 from the air and hydrogen from water, then heating and oxidizing them to create fats, starting with butter.&nbsp;The startup\u2019s agriculture-free process is said to release very few GHGs while it uses less than a thousandth of the water for crops. Other investors include&nbsp;<a href=\"https:\/\/synthesis.capital\/\">Synthesis Capita<\/a>l, which led the company\u2019s recent&nbsp;<a href=\"https:\/\/www.linkedin.com\/posts\/savor-it_how-chemistry-is-being-used-to-produce-superior-activity-7161818563652046848-2w0y?utm_source=share&amp;utm_medium=member_desktop\">Series A financing roun<\/a>d, and Bill Gates\u2019 VC firm Breakthrough Energy Ventures (BEV).<\/p>\n\n\n\n<p>As&nbsp;<a href=\"https:\/\/synthesis.capital\/insights\/how-chemistry-is-being-used-to-produce-superior-alternative-fats-introducing-our-investment-in-savor-foods\">explained by Synthesis Capital<\/a>, Savor\u2019s thermochemical approach offers lower production costs compared to biological systems and potential long-term cost parity with commodity oils. It has a reduced scale-up risk because it can utilize existing commercial-scale chemical processes, reducing the scalability challenges that other techs face. But more importantly, the synthetic butter promises great taste and functional properties.<\/p>\n\n\n\n<p>Beyond butter, Savor aims to develop alternatives for milk, ice cream,&nbsp;<a href=\"https:\/\/vegconomist.com\/food-and-beverage\/cheese-alternatives\/plant-based-blue-cheese-climax-foods-good-eggs\/\">cheese<\/a>, meat, and tropical oils, potentially revolutionizing sustainability in multiple categories.<\/p>\n\n\n\n<p>\u201cWe start with a source of carbon, like carbon dioxide, and use a little bit of heat and hydrogen to form chains which are then blended with oxygen from the air to make the fats &amp; oils we know, love, and drool over.
